A Texas Trifecta for inshore fishing is Redfish, Flounder, Trout.

Sort of did it on Saturday, but there was only one fish in the box, at the end of the day.

Caught several undersized Reds. Always fun, the tawny, bronze back as it breaks the surface, the spot on the tail, the struggle. Good stuff.

I set one line, under a cork, right at the edge of a point -- two channels converged, and that where we picked up the flounder. Right size for dinner.

Paisano Hotel

Never did stay at the Gage, too rich for my blood, but I have a new favorite hotel - in the world: Paisano Hotel in Marfa, TX.

It's a Trost & Trost Hotel, and at one time, correctly billed itself as the finest hotel between El Paso and San Antonio - arguably famous for housing all the movie stars during the making of the epic film Giant.

I've stayed (visited guests) in Austin's (landmark) San Jose. I can only imagine what Marfa's Thunderbird is like - same folks, same philosophies. What

Some wine magazine added me to their subscription list. Big, glossy, tabloid-sized weekly. Turns out, my name on the list was pure marketing.

While at Grace's, I made my now-infamous "wall-marts" chili. In deference to location, and by request, I used only mild, green chili. This recipe was stew meat, ground meat, cubed pork chops, and peppers. Poblano, NM Green, Serrano, JalapeƱo. And spritely tomatillos. Two garlic cloves, couple of old, yellow onions, adjusted to lower the heat coefficient. Whatever I could find at the big box store, namesake and source.
